Rex Cordell Griffiths, 67, of Salt Lake City, Utah, passed away on August 24, 2025.
Rex was born on March 26, 1958, in Salt Lake City, Utah, to Cordell and MaryLu Griffiths. From a young age, Rex had a big heart and an even bigger personality—traits that carried through every part of his life.
He began his career as a chef, working in many well-known downtown restaurants, where his creativity and dedication shined. Later, he found great joy working at Hartvigsen School, where he cared deeply for the students. They left such a mark on his life that he often shared stories about them with family and friends. Eventually, Rex shifted into the HVAC industry, where he not only built a successful career but also formed lifelong friendships that he cherished deeply.
Rex had a mischievous streak from the time he was young, when he and his siblings loved exploring downtown Salt Lake and finding trouble to get into. He grew into the kind of man who could make anyone laugh—the nicest soul with a one-of-a-kind presence. He had a gift for turning any situation into a good one, usually in his own funny (and sometimes inappropriate) way. His warmth, humor, and generosity touched everyone who knew him.
As he raised his children, Rex shared his love for downtown adventures with them, spending weekends exploring and creating lasting memories. He loved camping with his dad and brothers and proudly passed that tradition down to his kids, often taking them up Butterfield Canyon, where nights around the fire were filled with laughter, stories, and togetherness. He was famous for his silly ‘campfire dance,’ a tradition that never failed to make everyone laugh. Some of the best moments were spent watching Laurel and Hardy as a family, laughing until their stomachs hurt. His kids grew up with endless memories of joy and fun because of the way he lived and the way he loved them. Rex was the best father, a proud family man, and someone who always found a way to provide for those he loved.
Rex was also a lifelong animal lover. He had a soft spot for every creature, often taking in any animal that needed a home and never passing up a chance to feed stray cats wherever he saw them. His love for animals was just another reflection of his kind and generous heart.
One of his greatest joys later in life was becoming a grandfather. Knox and Honey brought endless light to his days, and he loved every moment with them—especially the way he teased Knox, who never missed a chance to give it right back. Their banter, laughter, and silly moments, along with the fun adventures he once shared with his own children, made being a grandpa one of the highlights of his life.
Rex is survived by his two sons, Chance (Myranda) Griffiths and Tyson Griffiths; his daughter, Gracie Griffiths, and honorary daughter Madison Tolman; his siblings, Sher (Ron) Goodfellow, Charles Griffiths, and Shawn (Shannon) Griffiths; and his beloved grandchildren, Knox and Honey Griffiths; and his dog Sammie. He also leaves behind many nieces, nephews, cousins and friends who loved him like family.
He was preceded in death by his parents, Cordell and MaryLu Griffiths; his grandparents; so many family members; great lifelong friends; and all of his beloved animals who were waiting to greet him.
Rex will be remembered always for his laughter, his kindness, and his ability to make life brighter for everyone he met.
At dad’s request there will be no funeral services held at this time. At a later date we will hold a celebration of life. In lieu of flowers, please make donations to the Best Friends Animal Society in his name.
