Lilly Ann Gallegos Kofoed, 76, of Murray, Utah, passed away peacefully on February 21, 2026, in Murray, Utah.


Lilly was born on October 18, 1949, in Salt Lake City, Utah, to Santiago Campos Gallegos and Inez Romero Armijo. She attended Bingham High School and went on to spend 45 years working as a waitress in the food service industry—a job she truly loved. Lilly took great pride in being good at what she did and was known for her strong work ethic, friendly spirit, and the care she gave to those she served each day.


Lilly found happiness in life’s simple pleasures. She loved fishing and camping, and she cherished the time spent outdoors and with the people she loved most. More than anything, Lilly loved her family. Her children, grandchildren, and great-grandchildren were the center of her world, and she treasured every moment she was able to spend with them.


She is survived by her son Marty & Traci Herrera of Duchesne, Utah; son Jeff & Kim Herrera of Stansbury Park, Utah; daughter Francine Herrera of Murray, Utah; and daughter Marcy Herrera of Orange, California; sister-in-law Sue Ellen Gallegos of Taylorsville, Utah; sister Angie Erickson of Murray, Utah; brother-in-law Marv Rollins; sister Margie & Mike Francis of West Jordan, Utah; nine grandchildren; nine great-grandchildren; and numerous nieces and nephews who will miss her deeply.


Lilly is preceded in death by her husband, Robert “Bob” Kofoed; grandsons Thomas Flores Herrera and Brennan Herrera; her parents, Santiago Gallegos and Inez Armijo; siblings James “Jimmy” Gallegos, Moises “Mo” Gallegos, and Dee Rollins; brother-in-law Wendell “Swede” Erickson; and nephews John Jerome “JJ” Gallegos and Derek Gallegos.


The family would like to extend their heartfelt gratitude to the staff at Intermountain Medical Center Home Hospice for the kindness, compassion, and care they provided during Lilly’s final days.


Lilly will be remembered for her strength, her dedication, and the love she had for her family. She will be deeply missed and forever loved.
